The hotel's dining offering is equally impressive. On the ground floor, the Byron Bay Oyster Bar and Seafood Restaurant takes a produce-first approach, leaning into simple preparations to let quality produce shine, with oysters and seafood moving with the seasons to ensure only the freshest ingredients are used. A state-of-the-art oyster tank uses carefully filtered water collected on a king tide from nearby Brunswick Heads to naturally cleanse and regenerate the oysters to the pristine condition usually reserved for eating straight from the water at a farm.


Satara was honoured to be part of bringing Hotel Marvell to life across multiple areas of the property. The dining and bar areas are furnished with Satara's Logan Arc Dining Chairs, Logan Weave Stools and Oliver Bar Stools, pieces chosen for their ability to complement the hotel's refined yet relaxed aesthetic. Upstairs at Horizon, guests can kick back and relax on Satara's Soraya Lounge Chairs while taking in those sweeping rooftop views. At ground level, the outdoor eating, drinking, and communal areas also feature a variety of Satara's Sarai Tropic Dining Chairs and Rain Lounge Chairs, bringing consistency and quality throughout the entire venue.
